Your tour begins at a place that surprises many, but no one who knows anything about the history of Roman cuisine: the old Jewish ghetto. Accompanied by your experienced foodie guide and just 11 other travellers, you will immerse yourself in one of the neighbourhood's popular trattorias and taste traditional, seasonal Roman starters as you learn how Jewish culture has influenced Roman cuisine over some 2000 years

When you leave the ghetto, go to an artisan cheese shop to learn about the long history of local cheese making while tasting Pecorino Romano and other Italian cheeses over a bottle of white wine. The combination of food and drink is very important for the Romans, so your next stop is one of the city's most famous delicacies, to try the fried mozzarella and rice balls, called supplì, with a glass of Italian beer. Craft beer in Italy? That's right, Italians are among the most enthusiastic brewers in Europe and their beer is just one of the many unexpected highlights of this experience

Another is the encyclopaedic range of charcuterie, which you can try at a nearby butcher. From salamis with fennel, truffles or Barolo wine, to salted meat and some surprises, enjoy a wide choice of meats and a good glass of red wine

Save space, because we saved the best for last. After a short tasting of olive oil and balsamic vinegar, you enter the kitchen of a real Roman pizzeria and make your own pizza. The dough is already risen and waiting, so you will learn all about kneading an (almost) perfect circle, how to spread just the right amount of spicy tomato sauce and the very important differences between Roman and Neapolitan pizza. Finally, like the Italians, you take a leisurely stroll through the city and stop for a cup of espresso or a scoop of ice cream
